The word “tapas” gets tossed around a little too easily these days, so Pamplona is reclaiming it with what Executive Chef Errol LeBlanc confidently calls “hands-down the most Spanish restaurant in Las Vegas.” It’s hard to argue with the results. Built and designed from the ground up with partner Marisol Crespo, the menu of about 45 small plates is designed with pork, cured meats, cheeses, rabbit, quail, and other ingredients ordered directly from Spain. That includes iberico ham, which will soon have an entire page of dishes on the menu to itself. But Pamplona is really about celebrating the social, upbeat culture of Spain — from the fiery tableside presentation of the grilled sausages and brandy to the Latin music that fills the space on Thursday nights.
